You will be welcomed by Miranda and given a little introduction on the 50 year old family business. You will learn about Miranda’s pastry roots and her tart making journey. Tarts play an extremely important part in Miranda’s family history.
You will learn the fundamentals of pastry making, skills, techniques for making, rolling, chilling, blind baking.
1. You will make three types of pastry, starting with a simple short crust.
You will make it by hand and in a machine. You will move on to making Pate Sucree (sweet pastry) and then you will graduate to making a Pate Sable (Sandy pastry - a much more technical dough).
2. You will then make a savoury tart and learn about marrying flavours and cheeses, and how to get the perfect wobble in a liquid tart.
3. You will make some Danish pastries and also learn how to use puff pastry pastry successfully to make a Somerset Apple Galette.
4. This is a unique course for a beginners to more advanced cooks who want to up their game.
5. You will come out of this course feeling completely comfortable with making and baking pastry and tarts. You will learn a new repertoire of wonderful tarts to wow your friends and family at home. You will get to take home some boxes filled with your masterpieces.

This is a fun and informative course. It is hosted in a bustling showroom, but it is fully immersive you don’t notice our customers wandering around. Have a good breakfast and come to get stuck in and learn. Our aim is to send you off so confident in making tarts you will find experimenting a doddle

You will learn the art of pastry and tart making from master baker and tart maker Miranda. Miranda is the daughter of well known food writer Tamasin Day-Lewis. She is passionate about teaching unique signature tarts from her mother’s well-known cook book The Art of the Tart.
Miranda grew up in Somerset and throughout her childhood she was introduced to the most amazing local producers through her mother being the food writer for the Telegraph for 15 years. Miranda has worked as a chef all over the world, more recently setting up the Kitchen at the Firehouse Somerset opposite Sandpits which is home to her cookery school. There is something about making pastry and tarts that fascinates Miranda and she takes huge pleasure in passing on her passion for tart making to others. This is pastry and tart making made easy !

We will be in an open kitchen in the showroom at Sandpits Heating Centre. Surrounded by woodfired ovens and Esse cookers which we will bake on.
Sandpits Heating Centre is one of a kind. It is our family-run business that is more than 50 years old. The family also own Living Pretty tea shop next door and The Firehouse Somerset Pub opposite. You can start with breakfast in our Old Bakery and finish with pizza and a cider after a hard day baking.
